Heat sesame oil in a large pan or wok over medium heat.

Add garlic and ginger, and cook for 1 minute until fragrant.

Add carrots, bell peppers, snap peas, and mushrooms. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Add broccoli and continue stir-frying for another 3-4 minutes.

In a small bowl, mix soy sauce, salt, and black pepper. Pour the sauce over the vegetables and stir well to coat.

Cook for an additional 2 minutes until the sauce thickens slightly.

Remove from heat and let it rest for 5 minutes.
