Heat vegetable oil in a large pan over medium heat.

Add chopped onion, minced garlic, and grated ginger. Sauté until onion turns translucent.

Add curry powder and turmeric powder. Stir well to coat the onions.

Add chopped vegetables (carrot, potato, cauliflower, and green beans). Stir and cook for 5 minutes.

Pour in coconut milk and season with salt. Stir to combine.

Reduce heat to low, cover the pan, and simmer for 15-20 minutes or until the vegetables are tender.
