Heat a pan over medium heat. Add all the spices (cumin seeds, coriander seeds, black peppercorns, cardamom pods, cloves, cinnamon stick, nutmeg, bay leaves) to the pan.

Dry roast the spices for about 2-3 minutes or until fragrant, stirring occasionally.

Remove from heat and let the spices cool.

Once cooled, grind the spices into a fine powder using a spice grinder or mortar and pestle.
