Dragon’s Tongue is a popular street food in many Asian countries. It gets its name from the crispy and elongated shape, resembling a dragon’s tongue.

This is vegan and gluten free recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

  1. Prepare all the vegetables by shredding the carrots, cabbage, and mushrooms. Finely chop the spring onions, garlic, and ginger.
  2. In a wok or pan, heat some oil and sauté the garlic and ginger until fragrant.
  3. Add the shredded vegetables and bean sprouts to the pan and stir-fry for a few minutes until they are slightly softened.
  4. In a small bowl, mix together the soy sauce, sriracha sauce, and lime juice.
  5. Pour the sauce over the vegetables in the pan and stir well to coat.
  6. Remove the pan from heat and let the filling cool for a few minutes.
  7. Fill a large bowl with warm water. Dip one rice paper sheet into the water for a few seconds until it becomes soft and pliable.
  8. Place the softened rice paper sheet on a clean surface and spoon some of the vegetable filling onto the center.
  9. Fold the sides of the rice paper over the filling, then roll it up tightly from bottom to top.
  10. Repeat with the remaining rice paper sheets and filling.
  11. Heat oil in a deep fryer or large pot to around 180°C (350°F).
  12. Carefully place the rolled Dragon's Tongues into the hot oil and fry until they turn golden brown and crispy.
  13. Remove from the oil and drain on paper towels.
  14. Serve the Dragon's Tongues hot, garnished with chopped peanuts and cilantro.
