In a saucepan, whisk together coconut milk and cocoa powder until smooth.

In a separate bowl, whisk cornstarch and a splash of coconut milk until dissolved.

Add cornstarch mixture, maple syrup, vanilla extract, and a pinch of salt to the saucepan with the coconut milk mixture.

Cook over medium heat, whisking constantly, until the mixture thickens and comes to a boil.

Reduce heat and continue whisking for another 2 minutes.

Remove from heat and pour the mixture into individual serving dishes.

Let cool at room temperature for 20 minutes, then refrigerate for at least 2 hours until set.
