In a food processor, blend the chocolate cookies until they form fine crumbs. Add melted coconut oil and pulse until combined.

Press the mixture into the bottom of a pie dish to form the crust.

In a mixing bowl, whisk together the creamy peanut butter, coconut milk, maple syrup, vanilla extract, and salt until smooth.

Pour the peanut butter mixture over the crust and spread it evenly.

Melt the dairy-free dark chocolate in a microwave or double boiler.

Pour the melted chocolate over the peanut butter layer and spread it evenly.

Sprinkle roasted peanuts on top.

Place the pie in the refrigerator and let it set for at least 4 hours.
