  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the almond milk, vegetable oil, vanilla extract, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Line a muffin tin with cupcake liners and divide the batter evenly among them.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Remove from the oven and let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
