Curry Spiced Winter Squash
Winter squash is a great source of vitamins A and C, as well as fiber.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Preheat the oven to 400°F (200°C). Cut the winter squash into cubes.

In a bowl, mix together curry powder, cumin, coriander, turmeric, salt, and black pepper.

Toss the winter squash cubes with the spice mixture until evenly coated.

Place the coated squash on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.

In a large saucepan, heat coconut milk and vegetable broth over medium heat.

Add minced garlic and ginger to the saucepan and cook for 2-3 minutes.

Add the roasted squash to the saucepan and simmer for 5 minutes.

Stir in lime juice and garnish with fresh cilantro.
