Heat vegetable oil in a large skillet or wok over medium heat.

Add onion and garlic, sauté until fragrant.

Add carrot and peas, cook until vegetables are tender.

Push the vegetables to one side of the skillet and add the cooked rice to the other side.

Sprinkle curry powder, soy sauce, salt, and black pepper over the rice. Mix well.
