  1. Preheat the oven to 400°F (200°C).
  2. Trim and peel the beets. Cut them into wedges.
  3. Toss the beets with 1 tablespoon of olive oil and season with salt and pepper. Arrange the beets on a baking sheet lined with parchment paper.
  4. Roast the beets in the preheated oven for 30-35 minutes or until tender. Let them cool.
  5. While the beets are roasting, peel and segment the oranges and grapefruits. Remove any white pith and seeds.
  6. In a small bowl, whisk together the remaining olive oil, honey, Dijon mustard, salt, and black pepper to make the dressing.
  7. In a large bowl, combine the roasted beets, citrus segments, mixed greens, thinly sliced red onion, pecans, and crumbled goat cheese.
  8. Drizzle the dressing over the salad and gently toss to combine. Let the salad rest for 10 minutes before serving.
