  1. Peel and chop the sweet potatoes, onion, and garlic cloves.
  2. In a large pot, heat some oil and sauté the onion and garlic until fragrant.
  3. Add the curry powder and cook for another minute.
  4. Add the chopped sweet potatoes and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the coconut milk, lime juice, salt, and black pepper.
  8. Simmer for another 5 minutes.
  9. Serve hot, garnished with fresh cilantro.
