Peanuts are not actually nuts, but legumes!

This is vegan, gluten free and high protein recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

  1. Heat oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Stir in curry powder and cumin powder, and cook for 1 minute.
  3. Add canned tomatoes, vegetable stock, and peanut butter. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  5. Return the soup to the pot and stir in coconut milk, lime juice, salt, and black pepper. Simmer for an additional 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
