Prepare all the vegetables by washing and cutting them into thin strips.

Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.

Place the softened rice paper wrapper on a clean surface. Add a small handful of kale leaves and a few strips of each vegetable on top.

Fold the sides of the rice paper wrapper over the filling, then roll it up tightly from the bottom.

Repeat with the remaining ingredients.

Serve the kale rolls with peanut sauce for dipping.
