Delicious Lentil Chili
Chili con carne, a popular dish in Texas, inspired the creation of vegetarian versions like lentil chili.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the lentils under cold water and set aside.

Heat olive oil in a large pot over medium heat.

Add chopped onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are softened.

Stir in chili powder, cumin, paprika, salt, and black pepper. Cook for another minute.

Add lentils, canned tomatoes (with juice), tomato paste, and water to the pot. Stir well.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 40 minutes or until the lentils are tender.

Remove the lid and let the chili rest for 10 minutes.

Serve the lentil chili hot, garnished with chopped cilantro and lime wedges.
