Lentils are an excellent source of plant-based protein and are widely used in Indian cuisine.

  1. Rinse the lentils and set aside.
  2. Heat oil in a large pot and add chopped onions, garlic, and ginger. Sauté until onions are translucent.
  3. Add curry powder, cumin, and turmeric. Stir well.
  4. Add the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in coconut milk and lemon juice. Cook for an additional 5 minutes.
  6. Season with salt and black pepper.
  7. Serve hot, garnished with cilantro.
