  1. Peel and dice the potatoes.
  2. Heat oil in a pan and add cumin powder, turmeric powder, and curry powder. Cook for a minute.
  3. Add chopped onion, garlic, and ginger. Cook until the onion turns translucent.
  4. Add diced potatoes and salt. Mix well and cook for 5 minutes.
  5. Add chopped tomato and cook for another 5 minutes.
  6. Cover the pan and cook for 10-15 minutes or until the potatoes are tender.
  7. Garnish with fresh coriander leaves and serve hot.
