Peel and dice the potatoes.

Heat oil in a pan and add cumin powder, turmeric powder, and curry powder. Cook for a minute.

Add chopped onion, garlic, and ginger. Cook until the onion turns translucent.

Add diced potatoes and salt. Mix well and cook for 5 minutes.

Add chopped tomato and cook for another 5 minutes.

Cover the pan and cook for 10-15 minutes or until the potatoes are tender.

Garnish with fresh coriander leaves and serve hot.
