Curried Cauliflower

Preheat the oven to 425°F (220°C). Cut the cauliflower into florets.

In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until golden brown.

In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and ginger. Cook until the onion is translucent.

Add the curry powder, turmeric powder, cumin powder, and coriander powder to the skillet. Stir well to coat the onion mixture.

Add the tomato and cook for 2-3 minutes, until softened.

Pour in the coconut milk and bring to a simmer. Cook for 5 minutes.

Add the roasted cauliflower to the skillet and stir to combine. Cook for an additional 2-3 minutes.

Remove from heat and stir in lemon juice and salt.

Serve the curried cauliflower over rice or with naan bread. Garnish with fresh cilantro.
