Peel and chop the carrots, onion, garlic, and ginger.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the carrots and curry powder, and cook for a few minutes.

Add the vegetable stock and bring to a boil. Reduce heat and simmer until the carrots are tender.

Using an immersion blender, blend the soup until smooth.

Stir in the coconut milk, lime juice, salt, and black pepper.

Simmer for a few more minutes to heat through.

Serve hot, garnished with fresh cilantro.
