Heat oil in a large pot and sauté the onion, garlic, and ginger until fragrant.

Add the carrots and cook for a few minutes.

Add the curry powder, cumin powder, coriander powder, and turmeric powder. Stir well.

Pour in the vegetable stock and bring to a boil.

Reduce heat and simmer for 20 minutes or until the carrots are tender.

Use an immersion blender or transfer the mixture to a blender and blend until smooth.

Return the soup to the pot and stir in the coconut milk, lemon juice, salt, and black pepper.

Simmer for another 5 minutes.
