  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Cut them into quarters.
  3. In a large pot, bring water to a boil and add the potatoes. Cook for about 15 minutes until the potatoes are tender.
  4. While the potatoes are cooking, cut the top off the garlic bulbs to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
  5. Place the garlic bulbs in the preheated oven and roast for 25-30 minutes until the cloves are soft and golden brown.
  6. Once the potatoes are cooked, drain them and return them to the pot. Add the roasted garlic cloves, olive oil, salt, and black pepper.
  7. Using a potato masher or fork, crush the potatoes and garlic together until well combined.
  8. Sprinkle with fresh parsley and serve hot.
