Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Rinse the quinoa under cold water and cook according to package instructions. Once cooked, let it cool.

In a large bowl, combine the cooked quinoa, almond flour, coconut oil, maple syrup, vanilla extract, baking powder, and salt. Mix well.

Fold in the dark chocolate chips and chopped nuts (if using).

Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.

Flatten each cookie slightly with the back of a spoon.

Bake for 15 minutes or until the edges turn golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack and let them cool completely.
