Peel and chop the sweet potatoes into small cubes.

In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.

Add the sweet potatoes, corn kernels, vegetable broth, coconut milk, nutritional yeast, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the sweet potatoes are tender.

Use an immersion blender to blend the soup until creamy and smooth. Alternatively, transfer the soup to a blender and blend in batches.

Serve hot, garnished with fresh parsley.
