  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  2. Add sliced carrots and cook for 5 minutes.
  3. Add vegetable broth, canned white beans, and peeled, cored, and chopped pears. Bring to a boil and simmer for 20 minutes or until carrots are tender.
  4. Remove from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.
  5. Return the pot to low heat and stir in coconut milk, salt, black pepper, fresh thyme, and chopped parsley. Cook for another 5 minutes.
  6. Serve hot and garnish with additional chopped parsley if desired.
