  1. Preheat grill to medium-high heat.
  2. Cut the corn kernels off the cob.
  3. Slice the yellow squash and red bell pepper into thin strips.
  4. In a large bowl, combine the corn, yellow squash, red bell pepper, olive oil, minced garlic, salt, and black pepper. Toss to coat evenly.
  5. Place the vegetable mixture on a grill pan or foil-lined grill grates. Cook for about 10-12 minutes, stirring occasionally, until the vegetables are tender and lightly charred.
  6. Remove from heat and let it rest for 5 minutes.
  7. Sprinkle with fresh cilantro and drizzle with lime juice. Serve hot.
