Preheat the oven to 400°F (200°C).

Cut a small 'X' on the flat side of each chestnut.

Place the chestnuts on a baking sheet and roast for 20-25 minutes, until the shells open.

Remove the chestnuts from the oven and let them cool slightly.

Peel the chestnuts while they are still warm.

In a large bowl, combine the peeled chestnuts, cherries, balsamic vinegar, olive oil, salt, black pepper, and fresh thyme.

Toss everything together until well coated.

Transfer the mixture to a baking dish and roast for an additional 5 minutes.
