Coconut Curry w/ Fried Tofu
Coconut curry is a popular dish in Thai cuisine, known for its rich and aromatic flavors. The combination of coconut milk, curry paste, and spices creates a creamy and satisfying curry that pairs perfectly with the crispy fried tofu.

Press the tofu to remove excess water and cut it into cubes.

Heat 1 tablespoon of vegetable oil in a pan over medium heat. Fry the tofu cubes until golden brown and crispy. Set aside.

In the same pan, add another tablespoon of oil and sauté the onion, garlic, and ginger until fragrant.

Add the red curry paste and cook for another minute.

Stir in the coconut milk and bring to a simmer.

Add the bell pepper, carrot, and broccoli. Cook for 5 minutes or until the vegetables are tender.

Stir in the soy sauce, lime juice, salt, and sugar.

Add the fried tofu cubes and basil leaves. Cook for another 2 minutes.

Serve the coconut curry with fried tofu over steamed rice.
