  2. Pierce the eggplant with a fork and place it on a baking sheet.
  3. Roast the eggplant in the oven for 30 minutes, or until the skin is charred and the flesh is soft.
  4. Remove the eggplant from the oven and let it cool.
  5. Once cooled, peel off the skin and discard.
  6. In a blender or food processor, combine the roasted eggplant, tahini, garlic, lemon juice, olive oil, and salt.
  7. Blend until smooth and creamy.
  8. Transfer the mixture to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of chopped parsley.
  9. Serve with pita bread or fresh vegetables.
