Coconut Curried Tofu with Green Jasmine Rice
Green jasmine rice gets its vibrant color from the addition of pandan leaves during the cooking process.

Cook the green jasmine rice according to package instructions.

Press the tofu to remove excess water and cut it into cubes.

Heat oil in a large skillet and add the tofu cubes. Cook until golden brown on all sides. Remove and set aside.

In the same skillet, sauté the minced garlic, ginger, and chopped onion until fragrant.

Add the curry powder and cook for another minute.

Pour in the coconut milk and bring to a simmer.

Add the sliced bell pepper, carrot, and green beans. Cook until the vegetables are tender-crisp.

Stir in the lime juice and salt.

Add the cooked tofu back into the skillet and simmer for a few more minutes.

Serve the coconut curried tofu over green jasmine rice.

Garnish with fresh cilantro.
