Peel and slice the carrots.

In a large pot, bring water to a boil and add the sliced carrots. Cook for 5 minutes or until tender.

Drain the carrots and set aside.

In a separate pan, heat coconut oil over medium heat. Add the cooked carrots and sauté for 2 minutes.

Pour in the coconut milk, salt, and black pepper. Stir well.

Reduce the heat to low and let it simmer for 10 minutes.

Remove from heat and let it rest for 5 minutes.
