Baba Ghanoush is a popular Middle Eastern dish made from roasted eggplants, tahini, and spices. It is believed to have originated in Lebanon and is often served as a dip or spread.

Preheat the grill or oven to 400°F (200°C).

Pierce the eggplants with a fork and place them on a baking sheet. Roast in the oven or grill until the skin is charred and the flesh is soft, about 30-40 minutes.

Remove the eggplants from the heat and let them cool for 10 minutes.

Peel off the charred skin and discard. Scoop out the flesh and transfer it to a colander. Let it drain for 15 minutes to remove excess liquid.

In a food processor, combine the drained eggplant, tahini, garlic, lemon juice, olive oil, salt, and cumin. Process until smooth.

Transfer the mixture to a serving bowl and garnish with chopped parsley.

Cover and refrigerate for at least 30 minutes before serving.

Serve with pita bread or fresh vegetables.
