Chorba Frik is a traditional Moroccan soup made with cracked wheat and vegetables. It is often served during Ramadan as a nutritious and filling meal to break the fast.

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is softened.
  2. Add diced carrots, sliced celery stalks, and chopped tomatoes. Cook for a few minutes.
  3. Drain and rinse chickpeas. Add them to the pot along with frik and vegetable broth. Stir well.
  4. Season with cumin, paprika, cayenne pepper, salt, and black pepper. Stir again.
  5. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes.
  6. Remove from heat and let it rest for 10 minutes.
  7. Stir in fresh parsley, fresh cilantro, and lemon juice.
  8. Serve hot and enjoy!
