Glass noodles, also known as cellophane noodles or bean thread noodles, are made from mung bean starch and are transparent when cooked.

  2. In a large bowl, combine lime juice, soy sauce, honey, garlic, red chili flakes, and salt. Mix well.
  3. Add the cooked glass noodles to the bowl and toss to coat them with the sauce.
  4. Add the sliced red bell pepper, carrots, cucumber, fresh cilantro, and roasted peanuts to the bowl. Mix well.
  5. Let the dish rest for 5 minutes to allow the flavors to meld together.
  6. Serve the Chile-Lime Glass Noodles garnished with additional cilantro and peanuts, if desired.
