Heat vegetable oil in a pan over medium heat.

Add chopped onion and sauté until golden brown.

Add minced garlic and grated ginger, cook for another minute.

Add turmeric powder, cumin powder, coriander powder, garam masala, and red chili powder. Stir well to combine.

Pour in the canned tomatoes and cook for 5 minutes, stirring occasionally.

Add chickpeas and salt. Stir and let it simmer for 10 minutes.

Pour in the coconut milk and cook for another 5 minutes.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh cilantro.
