  1. Rinse the black beans and soak them overnight in water.
  2. Drain the soaked beans and rinse again.
  3. In a large pot, add the soaked beans and 6 cups of water. Bring to a boil and simmer for 1 hour or until the beans are tender.
  4. In a separate pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until the onion is translucent.
  5. Add ground cumin, smoked paprika, salt, and black pepper to the pan. Stir well.
  6. Add the cooked beans to the pan and mix everything together.
  7. Cook for an additional 5 minutes to allow the flavors to blend.
  8. Remove from heat and garnish with fresh cilantro.
  9. Serve hot with lime wedges on the side.
