Preheat the oven to 375°F (190°C).

Slice the eggplants into 1/4-inch thick rounds.

Place the eggplant slices on a baking sheet and brush them with olive oil. Bake for 15 minutes.

In a separate pan, sauté the diced onion and minced garlic until golden brown.

Add the tomato sauce, Italian seasoning, salt, and black pepper to the pan. Cook for 5 minutes.

In a greased baking dish, layer the baked eggplant slices, tomato sauce mixture, vegan cheese, and fresh basil leaves. Repeat the layers until all ingredients are used.

Sprinkle breadcrumbs on top.

Bake for 25 minutes, or until the cheese is melted and bubbly.

Let it rest for 10 minutes before serving.
