Charred Romaine Salad with Pickled Radishes

Preheat a grill or grill pan over medium-high heat.

Cut the romaine lettuce in half lengthwise, keeping the core intact.

In a small bowl, combine vinegar, sugar, and salt. Add the radishes and let them pickle for 10 minutes.

Brush the cut side of the romaine lettuce with olive oil.

Place the romaine halves on the grill, cut side down, and cook for 2-3 minutes until charred.

Remove the romaine from the grill and let it rest for a few minutes.

In a separate bowl, whisk together lemon juice, olive oil, salt, and black pepper to make the dressing.

Place the grilled romaine on a serving platter, drizzle with the dressing, and top with pickled radishes.

Sprinkle with Parmesan cheese.
