Cauliflower Tagine
Tagine is a traditional Moroccan dish named after the earthenware pot it is cooked in.

Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.

Add cauliflower florets, cumin, coriander, cinnamon, and paprika. Stir well to coat the cauliflower.

Add chopped tomatoes, chickpeas, vegetable broth, raisins, salt, and pepper. Bring to a simmer and cover the pot.

Reduce heat to low and let it cook for about 30 minutes, or until the cauliflower is tender.

In a separate pan, toast the almonds until golden brown.

Serve the cauliflower tagine topped with toasted almonds and fresh cilantro.
