Grate the cauliflower and place it in a large bowl.

Finely chop the onion, garlic, and parsley and add them to the bowl.

In a separate bowl, mix the chickpea flour, ground cumin, ground coriander, baking powder, salt, and black pepper.

Add the dry mixture to the cauliflower mixture and mix well until combined.

Heat the vegetable oil in a frying pan over medium heat.

Take a small handful of the cauliflower mixture and shape it into a fritter.

Place the fritter in the pan and cook for 3-4 minutes on each side, or until golden brown.

Repeat with the remaining mixture.
