  1. Preheat the oven to 180°C (350°F). Grease and line a loaf pan.
  2. In a large bowl, mix together the grated carrots, grated apples, whole wheat flour, oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, honey, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Transfer the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
