Rinse the quinoa under cold water.

In a large pot, heat the coconut milk and vegetable broth over medium heat.

Add the diced red bell pepper, carrot, onion, minced garlic, and grated ginger to the pot.

Stir in the curry powder and cayenne pepper.

Add the rinsed quinoa to the pot and bring to a boil.

Reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the vegetables are tender.

Stir in the lime juice and salt.

Serve the soup hot, garnished with fresh cilantro.
