Candied nuts were traditionally served during holidays and special occasions as a symbol of prosperity and good luck.

Preheat the oven to 350°F (175°C).

In a saucepan, combine sugar, water, vanilla extract, and salt. Heat over medium heat until the sugar has dissolved, stirring occasionally.

Add the mixed nuts to the saucepan and stir until the nuts are coated with the sugar syrup.

Spread the nuts in a single layer on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until the nuts are golden brown and crispy, stirring halfway through.

Remove from the oven and let the nuts cool completely on the baking sheet.

Once cooled, break the candied nuts into smaller pieces if desired.
