Canadian (Habitant) Yellow Pea Soup
Yellow pea soup is a traditional dish in Canadian cuisine, particularly popular in the province of Quebec. It is often served during the winter carnival known as ‘Carnaval de Quebec’.

Rinse the yellow peas and soak them in water overnight.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and garlic. Cook until vegetables are softened.

Drain the soaked peas and add them to the pot.

Add vegetable stock, bay leaves, thyme, salt, and pepper.

Bring the mixture to a boil, then reduce heat and simmer for 1 hour or until the peas are tender.

Remove the bay leaves and use an immersion blender to puree the soup until smooth.

If the soup is too thick, add water to reach the desired consistency.

Season with additional salt and pepper to taste.
