  1. Rinse the yellow peas and soak them in water overnight.

  5. Add vegetable stock, bay leaves, thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 1 hour or until the peas are tender.
  7. Remove the bay leaves and use an immersion blender to puree the soup until smooth.
  8. If the soup is too thick, add water to reach the desired consistency.
  9. Season with additional salt and pepper to taste.
