In a large pot, combine the peanuts, water, Cajun seasoning, and salt.

Reduce the heat to low, cover the pot, and simmer for 2 hours, stirring occasionally.

After 2 hours, turn off the heat and let the peanuts rest in the cooking liquid for 30 minutes.
