Butternut Squash and Chickpea Curry
Butternut squash is a great source of fiber and vitamin A, while chickpeas are high in protein and fiber.

Heat oil in a large pan and sauté the onion, garlic, and ginger until fragrant.

Add the butternut squash and cook for 5 minutes.

Stir in the curry powder, turmeric powder, cumin powder, coriander powder, cayenne pepper, salt, and black pepper.

Add the tomatoes and cook for another 5 minutes.

Pour in the coconut milk and simmer for 15 minutes.

Add the chickpeas and cook for an additional 5 minutes.

Garnish with fresh cilantro and serve with lime wedges.
