Wash and remove the tough stems from the collard greens. Chop the leaves into bite-sized pieces.

Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.

Add the collard greens to the pot and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and apple cider vinegar. Season with salt, black pepper, and red pepper flakes.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 30-40 minutes, or until the collard greens are tender.

Remove the pot from heat and let the collard greens rest for 5 minutes before serving.

Serve hot as a side dish or as a main course with rice or cornbread.
