Bunny Chow is a popular street food dish in South Africa. It originated in Durban and is traditionally made with meat, but this vegan version is just as delicious!

This is vegan, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

  1. Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant and golden.
  2. Add curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper. Stir well to coat the onions and spices.
  3. Add diced potatoes and cook for 5 minutes. Then add chopped tomatoes and cook for another 5 minutes.
  4. Add chickpeas and coconut milk. Stir well, cover the pan, and simmer for 20-25 minutes until the potatoes are tender.
  5. While the curry is simmering, hollow out the bread loaf by removing the center portion, leaving a bread bowl.
  6. Once the curry is ready, spoon it into the hollowed-out bread loaf.
  7. Garnish with fresh cilantro leaves.
  8. Serve hot and enjoy!
