Buckwheat groats are not actually a grain, but rather the seeds of a plant related to rhubarb.

  1. Rinse the buckwheat groats under cold water.
  2. In a saucepan, bring water to a boil. Add the rinsed buckwheat groats and cook for 10 minutes.
  3. Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened.
  4. Add carrot, bell pepper, and frozen peas to the skillet. Cook for 5 minutes or until vegetables are tender.
  5. Once the buckwheat groats are cooked, drain any excess water and add them to the skillet with the vegetables. Season with salt and black pepper.
  6. Stir well to combine all the ingredients and cook for an additional 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with fresh parsley before serving.
