Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add chopped broccoli and vegetable broth. Bring to a boil and simmer for 15 minutes or until broccoli is tender.

Use an immersion blender or transfer to a blender to puree the soup until smooth.

Return the soup to the pot and stir in coconut milk. Season with salt and pepper.
