Lentil Soup with Plantains

Rinse the lentils and set aside.

Peel and slice the plantains.

In a large pot, heat olive oil over medium heat.

Add onion, carrot, celery, and garlic. Sauté until vegetables are tender.

Add lentils, vegetable broth, cumin, paprika, cayenne pepper, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for 20 minutes or until lentils are cooked.

Add plantains and continue to simmer for another 10 minutes or until plantains are soft.

Remove from heat and let it rest for 10 minutes.

Serve hot with a squeeze of lime juice and garnish with cilantro.
