Broccoli Soup

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add broccoli florets and vegetable stock. Bring to a boil, then reduce heat and simmer for 10 minutes or until broccoli is tender.

Using an immersion blender, blend the soup until smooth.

Stir in coconut milk, salt, and black pepper. Simmer for another 5 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot and garnish with a drizzle of olive oil and black pepper.
